- Rosemary
- Anise
- Curry powder
- Garlic powder

- Paprika (half cup )
- Curry powder ( half cup)
- Garlic powder (2 tablespoon )
- Ginger powder ( 2 table spoon)
- Dried basil leaves ( 2 tablespoon )
- Onion powder ( half cup)
- Nutmeg ( grated ) half table spoon
- Black pepper (whole ) 2 tablespoon
- White pepper ( whole ) 2 tablespoon
- Cardamom seeds ( 1 tablespoon)
- Fennel ( 2 tablespoon)
- African Nutmeg (ehuru) – 4
- Bayleaves – 3
-Toast the whole ingredients ( basil leaves , black pepper, white pepper, cardamom, fennel, african nutmeg , bayleaves ) in a frying pan for 3 – 5 minutes before blending in a dry blender and mixing well with the other ingredients . Toasting the ingredients is optional but it helps get more flavor out of the spices.
Once the ingredients are well mixed together you can store in an airtight ziploc pouch or in an airtight container away from direct sunlight . You can also store the ziplock or container of spice blend in the fridge to increase the shelf life and help lock in the flavor.
