If you live abroad and are craving Nigerian stew but can’t get access to Fresh Nigerian pepper; you can use dry tatashe and dry shombo instead.
All you need to do is wash and soak dry shombo and dry tatashe in warm water for 20 – 30 minutes ( the quantity you use should depend on how much stew you are looking to make) .
Once the dry pepper softens , transfer to a blender , add a generous amount of onions and blended together into a paste.
Heat some cooking oil in a pot and pour the pepper paste in . Add in your desired proteins, seasoning and spices , stir and leave to fry. You might want to stir from time to time so it does not burn . If the paste is too thick, you can also add in some water to get your desired thickness. Leave to fry for 15 – 20 minutes, don’t forget to check for taste and stir from time to time so the stew does not burn.
